I love pancakes
It’s one of the reasons I just couldn’t stick to that detox! I don’t think I was really prepared…so tomorrow morning it’ll be pancakes.
This recipe is made with whole wheat pastry flour and buckwheat
I add Chia Seeds, cinnamon and vanilla for an added little twist.
You have to try them. They are light and fluffy and the vanilla adds a little extra somethin’ special.
Multi-Grain Chia Seed Pancakes
(Makes 6 large fluffy pancakes)
Mix the dry ingredients in a bowl
- 1/2 cup whole wheat pastry flour
- 1/4 cup buckwheat flour
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 Tablespoon Chia Seeds
- 1 Tablespoon baking powder
Add to the Dry Ingredients
- 1 egg
- 1/2 cup yogurt
- 1/2 cup milk
- 2 Tablespoons Maple Syrup
- 1 Tablespoon Olive Oil
Mix Well and let it sit for 10 – 15 minutes
Pour onto a hot griddle (I use a 1/4 cup measuring cup)
Cook for 2-3 minutes on one side and flip over to cook remaining side.
Perfect with a nice hot cup of morning coffee 🙂
